Using chamomile for iced tea is a brilliant move. It’s naturally mellow and floral, but it needs a little help to stand up to being served cold. Infusing with honey is exactly the way to carry those floral notes forward, even on ice.
The Golden Hour Refresher

Ingredients
- 4–5 Chamomile tea bags (or 3 tbsp loose leaf)
- 2 cups boiling water
- 2 cups cold filtered water
- 3–4 tbsp high-quality honey (clover or orange blossom works best)
- 1 tsp fresh lemon juice (this wakes up the chamomile)
- Optional: fresh lavender or a slice of green apple for garnish
Instructions
1. The Deep Steep
Bring 2 cups of water to a boil, then let it sit for about 60 seconds (you want it around 90°C or 195°F so you don't scorch the delicate flowers). Pour over the chamomile bags. Let it steep for a full 7 to 10 minutes. Chamomile needs time to release its full body.
2. The Honey Infusion
While the tea is still warm, stir in your honey.
Why warm? Honey is dense. By stirring it in warm, you break down the enzymes and ensure it blends seamlessly into the water, creating a honey-chamomile syrup base.
3. Balance with Brightness
Stir in the lemon juice. You won't really taste lemonade, but the acidity acts as a flavor enhancer for the honey and chamomile, preventing the drink from tasting flat.
4. Dilute and Chill
Add the 2 cups of cold water to bring the temperature down. Pour into a carafe and refrigerate until cold. Pour over ice. Try using a splash of sparkling water for a fizzy and refreshing alternative.
