Strawberry Hibiscus Iced Tea

Strawberry Hibiscus Iced Tea

This refreshing berry tea is mixed with strawberry purée to add lots of extra fresh berry flavor. Serve with lots of ice and a sprig of mint for garnish and settle in for a sweet summer treat.

Ingredients

8 cups hot water; we recommend brewing at 190-209 °F
2 tea bags Stash Wild Raspberry Hibiscus
2 tea bags Stash Peppermint
1 pint strawberries, stems removed, plus extra for garnish
1/4 cup honey
1/4 cup water
Mint leaves for garnish

Makes about four 16 oz servings.

Directions

Boil the water in a kettle. Pour the hot water into a large teapot or heat-proof container and add the Wild Raspberry Hibiscus and Peppermint tea bags. Let the tea steep for 6-8 minutes. Remove the tea bags and let the tea cool completely. *Note: speed up the cooling process by placing the teapot/heat-proof container in the fridge.

Meanwhile, add the strawberries to a small pot along with the honey and water. Bring the mixture to a boil over medium high heat. Reduce the heat to low and cook until the berries have softened, about 5-8 minutes. Let the berry mixture cool for 10 minutes.

Once the berry mixture has cooled, place it in a blender and blend the mixture on high speed until the mixture is smooth. Pour the blended berries through a fine mesh sieve that is placed over a bowl. Set aside.

Once the tea has fully cooled, pour it into a glass pitcher and add in the strawberry purée. Use a wooden spoon to stir everything together to combine.

Serve over ice with a sprig of mint and extra strawberries for garnish.
