fresh apple cake
1½ cup sugar
3/4 cup butter
2½ cup flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
3/4 cup brewed double-strength tea* (steep 2 tea bags or 2 teaspoon loose tea in 3/4 cup boiling water)
3 cups apples, diced
1/4 cup raisins
1 tablespoon candied ginger, chopped
1 cup chopped nuts (walnuts, pecans and hazelnuts work well)
Preheat oven to 350 degrees F. Grease and flour a 10” x 5” x 2.75” loaf pan. Cream sugar and butter. Beat in eggs. Sift dry ingredients together, and add alternately with brewed tea. Fold in apples, raisins, nuts and ginger.
Spread into prepared cake pan and bake 45-55 minutes. Try poking a toothpick or knife into the cake—it should come out clean.
