Green tea is produced by steaming fresh-picked leaves before heat- drying. It has a more delicate taste and is pale green to golden in color. Ginger is one of the world's oldest and most popular spices. Cultivated in the tropical forests of Southeast Asia for over 3,000 years, ginger was one of the first spices to reach the Mediterranean. By the ninth century ginger was so popular in Europe that it was placed on the table, just as salt and pepper are today. Ginger has a warm, woody aroma and a flavor with a slight bite, and a sweet, rich aftertaste.
In 1690, Japan was ruled by the Tokugawa Shogunate, the Manchus had repelled the Mongols, Louis XIV ruled in splendor from his new palace in Versailles, Czar Peter had just attained the throne and Johann Sebastian Bach was five years old.
