This tea, nearly translucent in the cup, is a medium-bodied green tea with a lingering hint of smokiness and a slight astringency.
True to its name, Wild Green tea is indeed "wild," harvested from uncultivated tea trees growing in the mountains of China at an elevation of 2,600 to nearly 4,600 feet. In the wild, a tea bush will become a 15 to 30-foot evergreen tree that produces fragrant white blossoms in the spring. On tea estates, tea bushes are kept trimmed to more manageable heights of three to five feet.
Ancient Chinese poets referred to green tea as "the froth of liquid jade" or the "elixir of life." Today, green tea is the subject of frequent health research due to its naturally occurring chemical compounds called polyphenols. A subgroup of the polyphenols - the catechins (pronounced "CAT-i-kins") -- have been found in some research studies to be powerful disease fighters and potent antioxidants with many beneficial effects.
