Tea has been known throughout history as China's favorite treasure. Its origins date back to 2737 BC when it was discovered by the Chinese Emperor Shen Nong.
Huo Shan (or Crane Mountain) lies in the Dabie mountain range in western Anhui Province in China. Tea plants grow well in the warm, moist climate in well drained soil on this mountainous terrain, surrounded by clouds and mist that nurture the fine tea plants. This province is known for its exceptional green and black (such as Keemun) teas.
For our Huo Mountain green tea, the tender tips and buds are plucked by hand in early April and are hand processed. The final stage of pan-frying the leaves requires great skill to match the temperature to the tenderness of the leaves. The finished leaves are tinged with yellow, and when infused reveal large, beautiful light green leaves and a pale green liquor. The flavor of this tea is delicate and slightly sweet with no astringency.
