The French call Creme Brulee "creme de la creme" or "best of the best". The recipe for this divine dessert was developed in France hundreds of years ago. In fact, it is one of the oldest recipes known.
The original recipe is a custard made of egg yolks, heavy cream, sugar and whole vanilla beans, blended and then baked in ramekin cups (small ceramic baking dishes). The custard is then covered with brown sugar which is caramelized under a broiler or with a salamander (a kitchen tool with a wooden handle and a cast iron disk at one end which is heated on the stove and used much like an old iron). The result is a crisp, sugar caramel on top of a velvety, cream custard. Many variations of the traditional recipe have been created such as adding fruits (apples, berries, pumpkin), liquors (rum, scotch) and candies (chocolate, butterscotch) to the custard.

The result is a smooth and delicious tea with the heavenly aroma of fresh caramel and a slightly sweet aftertaste. This tea is best enjoyed after dinner with a touch of sugar.
