Our Fusion Red & White tea tastes smooth with a hint of sweetness and is also full of antioxidants. It is a unique blend of rare, expensive white tea and rooibos, an indigenous herb of South Africa that is made from the fine needle-like leaves of the "Aspalathus linearis" plant. White tea is one of the most prized and expensive teas in the world. It is difficult to obtain, as production is extremely limited. Produced exclusively in China, white tea is produced mainly in the Fukien province. Harvested only a few days of the year, white tea comes from a rare strain of the tea plant known as "Big White." It undergoes almost no transformation--once harvested, it is neither fermented nor rolled but merely withered and dried. Researchers speculate that the processing of tea determines its cancer fighting potential. Because white tea goes through the least amount of processing, it theoretically has the most polyphenols (as some polyphenols are oxidized or destroyed during processing). Some research has shown these polyphenols are linked to cancer prevention. While some studies have been conducted, more are needed to determine whether white tea protects humans against cancer. The production of rooibos (pronounced roy-boss) began at the turn of the 20th century in the Cedarberg Mountain wilderness just north of Capetown where the locals harvested the wild plants with axes and hammers and left them to oxidize before drying in the sun. In 1904 Benjamin Ginsberg, a Russian immigrant from a family who had been in the tea industry for generations in Europe, began to sell this "mountain tea." By 1930 Dr. P. Le Fras Nortier, a well known physician, had discovered the health benefits of rooibos, and cultivation and production began. During the plant's ripening process the leaves develop a reddish brown color, explaining why it was given its name "rooibos" or "red bush". Today, rooibos has been growing in popularity because of its refreshing taste and health benefits. Like green tea, Rooibos is high in vitamins, minerals, and antioxidants which some studies link to helping reduce the risk of many chronic health problems.
