How Is Seaweed Grown And Processed?

Yamamotoyama Nori (seaweed is called "nori" in Japan) is carefully harvested from the rich seas that surround Japan. It is made from several species of Porphyra seaweed that are washed and spread thin to dry. The nori is then roasted to enhance its flavor and texture, turning it a brilliant green. Nori seaweed grows at a depth of about 25 feet in the ocean. Production of nori varies from year to year depending on the weather and the growing area. The production season usually starts in early November and lasts until late March.

What Is The History Of Seaweed As A Food Product?

Japan is a mountainous island nation and what little arable land exists is terraced for rice and a few other crops. The surrounding seas are warmed by the plankton-rich "Kuroshio" or Japan current, and are teeming with an amazing variety of fish and shellfish. Japan has always looked to the sea to feed its population, its cuisine emphasizing a rich bounty of foods from the sea.
Seaweed was first consumed 1500 years ago, according to early written records. During the Asuka Era (600-700AD) and Nara Era (700-800AD) seaweed was only consumed by the Japanese nobility. Until the Middle Ages there was only wild seaweed, which limited it as a food source. During the Tokugawa Era (1600-1800AD), Ieyasu Tokugawa, the shogun of the time, ordered fishermen in the small town of Shinagawa to bring him fresh fish everyday. The fishermen built an offshore fence and started a fish farm. They also found that seaweed preferred growing on this fence. Thus seaweed aquaculture was born.

Yamamotoyama Nori Seaweed has a crispy texture and its saltiness complements the soft sweetness of sushi rice. Sushi makes a wonderful hors d'oeuvre and it can also be served as a main course.

In Japan nori is eaten almost everyday, including at breakfast time. Most of the time people eat it with rice, which is the major carbohydrate in the Japanese diet. For Sushi, rice is rolled with the nori and with a variety of vegetables and fish.
